How To Cook Jollof Rice
Jollof rice is a popular West African dish made with rice, tomatoes, and spices. Here’s how to cook a delicious pot of Jollof rice:
Ingredients
2 cups long-grain parboiled rice
4 large tomatoes (or 1 cup canned tomatoes)
2 red bell peppers
1 onion (divided into two)
2 cloves garlic (optional)
1 teaspoon thyme
1 teaspoon curry powder
1 teaspoon paprika (optional, for color)
2 bay leaves
1 teaspoon salt (or to taste)
1 teaspoon black pepper
1 teaspoon seasoning powder or cubes
1/2 teaspoon chili powder (optional, for heat)
1/4 cup vegetable oil
2 tablespoons tomato paste
2 cups chicken or vegetable broth (or water)
1 cup mixed vegetables (optional)
1 pound chicken or beef (optional)
Instructions
1. Blend the Sauce
Blend the tomatoes, bell peppers, half of the onion, and garlic (if using) until smooth.
2. Prepare the Base
Heat oil in a large pot and sauté the remaining half of the onion (chopped) until soft.
Add tomato paste and cook for about 3 minutes.
Pour in the blended tomato mixture and cook for 10–15 minutes, stirring occasionally until it thickens and the oil separates.
3. Season the Sauce
Add thyme, curry powder, paprika, bay leaves, salt, black pepper, seasoning cubes, and chili powder. Stir well.
Pour in the broth (or water) and let it simmer for a few minutes.
4. Cook the Rice
Rinse the rice and add it to the pot. Stir well to coat the rice with the sauce.
Reduce the heat to low, cover the pot with foil or a lid, and let it cook for about 20–30 minutes. Stir occasionally and add more water or broth if needed.
5. Add Vegetables (Optional)
If using mixed vegetables, add them in the last 5 minutes of cooking.
6. Serve
Once the rice is tender and has absorbed the flavors, remove the bay leaves and serve hot. Enjoy with fried plantains, grilled chicken, or a side of salad.
